Freebie Files – EatingWell’s Comfort Foods Made Healthy

I’ve been focused on comfort foods the past two weeks – mashed potatoes, tomato soup, banana bread, and breaded chicken strips.   I guess at this point in the winter, when your body has had its fill of cold, rainy days, it feels right to be nurturing oneself with warm, soft foods like these.

The featured cookbook for this past week has been EatingWell’s Comfort Foods Made Healthy (2009).  I respect any cookbook that can cut calories and still provide recipes that taste right without turning to artificial sweeteners.   I’ve adapted 2 recipes from the cookbook this past week, turning out gluten-free Almond Crusted Chicken Strips and a vegan Healthy Banana Bread that is, of course, gluten-free.

Are there any allergy-sensitive recipes you can make straight from the page?  Of their 175 recipes, I counted 17 recipes that are gluten- and dairy-free, all listed below.  Not huge numbers, but I wouldn't expect many.  After all, comfort foods tend to be carb-heavy and/or cheese-laden (think lasagna), and although the editors made the recipes healthier by reducing the fat or sugar, they didn’t go so far as to replace the pasta in some dishes with, say, millet or quinoa.   

Like most standard cookbooks, it’s slim on gluten-free desserts (“Quick Berry Mixed Topping” is one of the few), but this cookbook has plenty of gluten-free main dishes and sauces that sound tempting.  I’ve been wanting to learn how to make good salmon cakes, and they’ve got a recipe that sounds fantastic.
